I made this recipe a while ago and decided to share it with you all. It is called Chicken and Black Bean Burritos. It is a yummy, yet easy recipe that can be completed in only 30 minutes. Hope you all enjoy!

- 1/3 cup sliced green onions
- 1 cup diced red bell pepper
- 1/2 cup cilantro
- 1 15 ox can black beans
- 1 box Spanish style rice (with ingredients needed on box)
- 1 lb chicken breasts, cut into 1 inch cubes
- 2/3 cup water
- 1 package taco seasoning
- Shredded Cheddar Cheese
- 6 Flour Tortillas
Step 1: In a medium pan make rice as directed on the package. Set aside when done.
Step 2: In a 10-inch skillet, heat a little oil over medium heat for 1 to 2 minutes. Add the chicken and cook 3 to 4 minutes or until chicken is no longer pink in the center. Stir in taco mix and water, cook an additional 3 to 4 minutes, stirring occasionally, until most of the liquid is absorbed.
Step 3: Mix together chicken mixture, beans, bell pepper, green onions, cilantro and rice mixture. If necessary, cook until everything is hot.
Step 4: Spoon the chicken mixture on to the tortilla and top with the shredded cheese, sour cream, and salsa (or whatever your hear desires).
I love this recipe and have made it several times. It is super quick and easy to make. Hope you all like it!
